Chocolate, vanilla, pomegranate and pistachio makes for a rich brownie treat.
Recipe Ingredients:
1 1/2 cup unsweetened chocolate, finely chopped
1 3/4 cup butter, cut into small cubes
4 eggs
2 cups granulated sugar
1/2 tsp vanilla extract
1 cup all purpose flour
1 cup chopped Wonderful Pistachios
Melt chocolate and butter over a double boiler. While chocolate is melting, whip eggs and sugar in a large bowl until well blended. Add the melted chocolate and vanilla to the eggs. Stir to blend completely. Stir in the flour. Spread the batter evenly into a parchment lined and buttered 9 inch baking dish.
Bake at 325 degrees for 40 minutes, rotating the pan after 20 minutes.
Cool before adding the ganache.
Pomegranate Ganache
1/2 cup POM Wonderful 100% Pomegranate Juice
1/2 cup heavy cream
2 cups semi-sweet chocolate, finely chopped in separate bowl
In a saucepan heat pomegranate juice and sugar over medium-high heat until reduced by half.
In a blender add all ingredients and blend until vinaigrette has thickened slightly and is well-mixed. Adjust seasoning as needed.
Spread ganache evenly on cooled brownies and top with chopped pistachios.
Kitchen tip: Make ahead and keep refrigerated up to a month.
Total prep time: 20 minutes
Makes 15 brownies

@ashunn, thanks, but actually that ingredient list is for the brownies. I’m talking about making the ganache, which has only 3 ingredients listed: Pom juice, cream, and chocolate, but then it says to heat the pom juice and sugar. So should it be 4 ingredients, and sugar should be added, or are the directions incorrect?
2 cups granulated sugar is underneath the eggs.
The directions for the ganache say to heat the pom juice and SUGAR, but there is no sugar in the ingredients. Is it supposed to say heat the pom juice and cream, or is sugar left out of the ingredient list? Thanks for clarifying.
