Recipe: “Paramount Crunch” and White Chocolate Pistachio Bark

Wonderful Pistachios are the perfect everyday snack but we know that once in a while you get a serious sweet tooth.  So we’ve provided the perfect homemade pistachio dessert recipes in the form of our “Paramount Crunch” (which is one of the most addictive dessert snacks we’ve had) and white chocolate pistachio bark.  One’s sweet, one’s salty!  Enjoy!

Paramount Crunch

8 oz bag puffed corn
8 oz butter
8 oz brown sugar
4 oz light corn syrup
1 tsp baking soda
8 oz crushed Wonderful Pistachios
12 oz whole Wonderful Pistachios

Bring butter, brown sugar and corn syrup to a boil.
Stir and boil for 2 minutes, remove from heat and add baking soda, stir until incorporated. Pour over the puffed corn and pistachios, mix well.
Place mix on greased sheet trays and bake at 250* for approx. 45 minutes.

 

White Chocolate Pistachio Bark

1 cup salted, chopped Wonderful Pistachios; ¼ cup reserved
1 pound white chocolate; finely chopped
1- 11″ x 17″ baking sheet lined with parchment paper

To melt chocolate – DO NOT BURN – temp. sensitive
- Using a microwave, place 3/4 of chocolate in a microwave-safe glass or ceramic bowl (set aside remaining chocolate)
- Program microwave at 50 percent power
- With bowl uncovered, heat chocolate for 30 seconds then stir
- Repeat, heating for 30 seconds until almost all the chocolate in the bowl is melted, about 3-6 minutes total
- Add reserved chocolate and stir constantly until completely melted and smooth
- Stir in 3/4 cup pistachios
- Spread 3/4 of the chocolate about 1/4 inch thick, on the parchment
- Sprinkle with remaining pistachios
- Allow bark to cool until hard, at least 20 minutes
- Break into pieces
